Ingredients

Serves 2 servings
  • Udon noodles for 2 servings
  • as neededSesame oil,
  • 2 teaspoons(about 10 ml) Chinese soup base (such as chicken bouillon paste or powder)
  • 1 tablespoon (15 ml)sake (or dry white wine)
  • 1/2 teaspoon(about 2.5 ml) salt
  • 1 teaspoon(about 5 ml) soy sauce
  • 1/2 teaspoon(about 2.5 ml) grated garlic
  • 1 tablespoon (15 ml)sesame oil (for finishing)
  • About 5 oz (150 g) thinly sliced pork (such as pork shoulder or pork belly)
  • 1/4 headcabbage
  • 1/2 bagbean sprouts
  • About 1 1/4 inches (3 cm) carrot
  • 1/2 packshimeji mushrooms
  • 1/4 bunchgarlic chives
  • Green onions, as desired
  • The vegetables marked with ★ are just examples—use any vegetables you have in your fridge

Steps

  1. 1

    Wash the vegetables thoroughly. Cut the cabbage and carrot into thin strips or bite-sized pieces. Mix together the ingredients marked with ☆ in a small bowl.

  2. 2

    Heat sesame oil in a frying pan. Add the pork and cook, then add the vegetables (except for the garlic chives) and stir-fry.

  3. 3

    Add the cooked udon noodles and stir-fry briefly. Add the Chinese soup base and the mixed ☆ seasonings, then stir-fry everything together. Add the garlic chives last.

  4. 4

    Once everything is well combined and seasoned, drizzle with the finishing sesame oil. Serve on a plate and top with green onions if you like.
