Ingredients

4 servings
  • 100 gKale
  • 1/2-1Carrot
  • 2Red Cabbage Leaves
  • 1/4Red Onion *optional, thinly sliced
  • 1/4 cupToasted Peanuts *coarsely chopped
  • <Peanuts Dressing Ingredients>
  • 1 tablespoonPeanut Butter
  • 1 tablespoonHot Water
  • 1 tablespoonRice Vinegar
  • 1/2 tablespoonSugar
  • 1/2-1 tablespoonSoy Sauce
  • 1 pinchSalt
  • 1/4 teaspoonRa-yu (Chilli Oil)

Steps

  1. 1

    Remove thick hard stems from Kale. Thinly slice the leaves. Other vegetables are also thinly sliced.

  2. 2

    Place all vegetables in a large bowl and add a pinch of Salt and mix well.

  3. 3

    Place Peanut Butter in a small bowl, add Hot Water and mix well to loosen. Add the other dressing ingredients and mix well.

  4. 4

    Pour the dressing over the vegetables and combine well.

  5. 5

    Sprinkle coarsely chopped Toasted Peanuts and drizzle some more Ra-yu (Chilli Oil) if you like, and serve.
