Ingredients

Serves 1 serving
  • 1serving Chinese-style ramen noodles
  • 2 leavesbaby bok choy
  • Meat Miso:
  • 1.75 ozground pork (50g)
  • 3/4 inchfresh ginger (from a tube or grated)
  • 1small amount of toasted sesame oil
  • 1 teaspoonsweet bean paste (tianmianjiang)
  • 1/2 teaspooneach soy sauce and sake
  • Sauce:
  • 1 1/2 tablespoonstahini (sesame paste)
  • 2 teaspoonssoy sauce
  • 1 teaspoonrice vinegar
  • Chili oil (to taste)
  • 2 teaspoonstoasted sesame oil
  • 1/2 teaspoondoubanjiang (spicy bean paste)
  • 1 1/4 inchpiece green onion
  • Soup:
  • 2/3 cupunsweetened soy milk (150ml)
  • 1 cupwater (250ml)
  • 2 teaspoonschicken bouillon powder (or chicken soup base)

Steps

  1. 1

    Note: Boil the noodles while preparing the soup.

  2. 2

    Finely chop the green onion.
    • Boil the baby bok choy.
    • For the sauce, mix all the sauce ingredients together.
    (Optional: Add shredded green onion as a topping if you like.)

  3. 3

    Meat Miso:
    Heat sesame oil in a frying pan, then sauté the ground pork and ginger.
    Once cooked through, add the seasonings and stir-fry briefly.

  4. 4

    Chili Oil:
    In a pot, add the chili oil ingredients and sauté until the doubanjiang becomes fragrant.

  5. 5

    Soup:
    Using the same pot, add the soup ingredients and bring to a gentle boil. Turn off the heat and stir in the sauce mixture.

  6. 6

    To serve, place the cooked noodles, soup, meat miso, and bok choy in a bowl. Enjoy!
