Miso-Marinated Grilled Cod

This is cod marinated for a day in a miso marinade. I steamed it in a frying pan lined with fish grill foil. The miso flavor is delicious!

My husband, who enjoys fishing, caught this cod. We usually prepare it the same way, so this time I tried making a miso marinade, which I rarely do, in my own style! Mild white fish is delicious no matter how you prepare it!

Cooking Instructions

Prepare the cod fillets. Mix the sake, miso, and mirin for the miso marinade. Spread half of the marinade evenly in a container like a Tupperware.

Place a paper towel over the marinade and arrange the cod on top.

Cover with another paper towel and spread the remaining marinade evenly. Fold any excess paper towel inward.

Cover tightly with plastic wrap and refrigerate overnight to let the flavors soak in.

Grill the marinated cod. Since it hasn't touched the miso directly, you can grill it as is. Heat a frying pan, line it with fish grill foil, and place the cod skin-side up.

Cover and steam-grill. Use medium-low heat, and after 2-3 minutes, when the surface of the fish turns white, flip it over and continue grilling.

Since moisture will be released, grill without the lid to evaporate the moisture. Brush a little vegetable oil on the surface for a glossy finish.

Serve on a plate and drizzle with citrus juice before eating.

☆ Adjust the amount of seasonings to your taste. ☆ You can also reduce the amount of miso and add soy sauce and sugar.
