Rice is cooked in coconut milk and pandan leaves, the milk gives different taste to the rice. It is served mostly in South east Asian countries.

Boil the egg and keep it aside. if you like omelet egg, it can be served with as well.

Cook the rice. Wash a cup of rice (long grain / jasmine rice). In a pot, place the rice. Add the half cup coconut milk, 1 cup water. it depends on the rice, one cup rice normally needs 2 cup water. Please adjust it accordingly. Add 1/2 tbsp salt, and pandan leaves. Bring the rice to boil, and simmer it for 10 minutes. Then, switch off the heat, cover the pot and set the aside. Let it steam by itself for another 10 minutes.

While that, you may pan fry the raw peanuts until brown 4-5 minutes, transfer to the plate with paper napkin to absorb the excess oil.

If you love dried anchovies, you may pan fry some. Dried anchovies are good to accompany the dish. Fried chicken is good as well as side dishes.

For the sambal, please refer to my sambal/tomato chili sauce recipe. Prepare some sliced tomato and cucumber. Slice the boiled eggs.

The rice should be ready. Please enjoy your nasi lemak.
