Ingredients

Serves 1 serving
  • 1/4-1/2onion
  • 3-3.5 ozchicken thigh
  • 1egg
  • 1 tablespoon● shirodashi (Japanese soup base)
  • 1 tablespoon● mirin (sweet rice wine)
  • 1 teaspoon● sugar
  • 1/2 tablespoon● sake (Japanese rice wine)
  • 1/2 tablespoon● soy sauce
  • about 1/2 cup ● water (100 ml)
  • as neededgreen onion or mitsuba (Japanese parsley)

Steps

  1. 1

    Cut the chicken into bite-sized pieces and slice the onion.

  2. 2

    Add the ● ingredients to a frying pan and mix. Heat over medium until it lightly boils.

    Add the onion and simmer for a while.

    When the onion becomes translucent, add the chicken and continue to simmer.

    Meanwhile, crack the egg into a bowl and lightly beat it, cutting through the egg whites. *Do not mix completely! This is important!

    Once the chicken is cooked through, reduce to low heat, tilt the pan, and pour in 2/3 of the egg.

    When the egg starts to set, pour in the remaining egg and cook on low for another 10 to 20 seconds.

    Pour over a bowl of rice and garnish with green onion or mitsuba to finish!
