Ingredients

Serves 1 serving
  • 2.5–3.5 oz pork shoulder or pork stir-fry strips (70–100 g)
  • 2 tablespoonssugar
  • 1 tablespoonrice vinegar
  • 2 tablespoonssoy sauce
  • 1/3 bunch(about 2 oz/60 g) baby bok choy or similar leafy greens
  • 1 packfrozen udon noodles
  • as neededMayonnaise,

Steps

  1. 1

    Briefly dip the pork in boiling water until the color changes, then remove immediately and drain well.

  2. 2

    In a small bowl, mix the sugar, rice vinegar, and soy sauce. While the pork is still warm, add it to the sauce and let it marinate.

  3. 3

    Microwave the frozen udon noodles according to the package instructions, then rinse in ice water to cool.

  4. 4

    Rinse the bok choy, then microwave using the vegetable setting or, if unavailable, microwave at 500W for 4–5 minutes until cooked.

  5. 5

    Squeeze out excess water from the bok choy and cut into bite-sized pieces.

  6. 6

    Place the cooled udon noodles on a plate, top with the marinated pork and sauce, then add the bok choy and drizzle with mayonnaise.

  7. 7

    If desired, sprinkle with shichimi togarashi (Japanese seven spice) or sesame seeds to finish.
