  1. 1fillet store-bought unagi (eel)
  2. as neededSake,
  3. as neededUnagi sauce,
  4. 1serving cooked white rice
  5. as neededSansho pepper,

    Rinse the store-bought unagi under water to remove the old sauce.

    Pour sake over the unagi.

    Cover with plastic wrap.

    Microwave for about 2 minutes to steam the unagi with the sake.

    Generously pour fresh unagi sauce over the unagi.

    Line a toaster oven tray with aluminum foil and parchment paper. Toast the unagi for about 3–4 minutes, until the fat starts to bubble.

    Scoop rice into a bowl and drizzle with unagi sauce as desired.

    Place the unagi on top of the rice.

    Remove the skewer by twisting and pulling it out. Add more sauce and sprinkle with sansho pepper to taste. The inside will be fluffy and the outside crispy.
