Ingredients

Makes about 45 gyoza
  • 10.5 ozground pork (300g)
  • 14 ozcabbage or napa cabbage (400g)
  • 1 tablespoonsoy sauce
  • 2 tablespoonssake (or dry sherry)
  • 1 tablespoonsesame oil
  • 1/2 tablespoonchicken bouillon powder
  • 1/2 tablespoonoyster sauce
  • 1 pincheach of sugar, salt, and pepper
  • Grated garlic and ginger, to taste

Steps

  1. 1

    Finely chop or shred the cabbage (or napa cabbage). Sprinkle with 3 teaspoons salt (not included in ingredient list), mix, and let sit for about 30 minutes to draw out moisture.

    Squeeze the cabbage firmly to remove excess water.

  3. 3

    Add all the seasonings to the ground pork and mix well until the meat becomes pale and sticky.

  4. 4

    Mix the squeezed cabbage into the pork mixture thoroughly. Let it rest for a bit to allow the flavors to blend (about 1 hour is ideal).

    Wrap the filling in gyoza wrappers and pan-fry until done!
