Homemade gyoza stuffed with plenty of filling are incredibly tasty!
Recipe background: I wanted to remember this delicious combination, so I'm saving it here! I always use large gyoza wrappers.

Finely chop or shred the cabbage (or napa cabbage). Sprinkle with 3 teaspoons salt (not included in ingredient list), mix, and let sit for about 30 minutes to draw out moisture.

Squeeze the cabbage firmly to remove excess water.

Add all the seasonings to the ground pork and mix well until the meat becomes pale and sticky.

Mix the squeezed cabbage into the pork mixture thoroughly. Let it rest for a bit to allow the flavors to blend (about 1 hour is ideal).

Wrap the filling in gyoza wrappers and pan-fry until done!
