Ingredients

  1. 1whole beef tenderloin
  2. For the marinade:
  3. 1/4 cupolive oil (60 ml)
  4. 2-3 clovesgarlic, minced
  5. 1 tablespoondried basil
  6. 1/2 tablespoondried oregano
  7. 1/2 tablespoondried thyme
  8. 1/2 tablespoonsalt
  9. 1 tablespoonWorcestershire sauce
  10. For the sauce:
  11. 1/2 cupfinely chopped shallot (about 75 grams)
  12. 2 clovesgarlic, pressed
  13. 1/4 quartheavy cream (about 1 cup or 240 ml)
  14. 1/3 cuptomato purée (80 ml)
  15. 2 cansbeef broth (about 28 ounces or 800 ml total)
  16. 3/4 teaspoonblack peppercorns
  17. 3/4 teaspoongreen peppercorns
  18. 3/4 teaspoonpink peppercorns
  19. Brandy for flambéing

    Sear the beef tenderloin on all sides in butter and oil until golden brown. Coat with the mixed marinade and bake uncovered at 350°F (180°C) for 25 minutes.

    Remove from the oven and take out the meat. In the same pan, add 6 tablespoons (90 grams) butter, shallot, and garlic. Sauté until well seasoned.

    Add the tomato purée and continue to cook. Then add the flambéed brandy and the coarsely ground peppercorns. Stir in the cream and turn off the heat. Pour this sauce over the steaks.

    Alternatively, if the filet is already cut into medallions, you can cook them on the stovetop to your preferred doneness, then serve with the sauce.
