Ingredients

  • 1 tbspOlive oil
  • 1/4 mediumonion, diced
  • 1 pinchGarlic ( powder or fresh )
  • 1 pinchDried thyme leaves
  • 1 cupEggplant, diced
  • 1/2 cupGreen or red bell pepper, diced
  • 1 cupZucchini, diced
  • 1Tomato, chopped
  • 2 tbspTomato paste
  • 1/4 cupQuinoa
  • 1 cupVegetable broth
  • 1Fresh basil and/or parsley (optional)

  1. 1

    In a medium saucepan, heat the olive oil over medium heat. Add the onion and cook until soft, about 5 min.

  2. 2

    Add more broth if necessary during cooking

  3. 3

    Remove from the heat and stir in cheese and fresh herbs. Purée in a food processor until you reach the desired consistency, adding additional vegetable broth or water if needed.

  4. 4

    Stir in all the ingredients from garlic to vegetable broth. Bring to a simmer, lower the heat and cover. Cook for 15-20 min, until the quinoa has "sprouted" and the vegetables are tender.
