Sear the beef tenderloin on all sides in butter and oil until golden brown. Coat with the mixed marinade and bake uncovered at 350°F (180°C) for 25 minutes.

Remove from the oven and take out the meat. In the same pan, add 6 tablespoons (90 grams) butter, shallot, and garlic. Sauté until well seasoned.

Add the tomato purée and continue to cook. Then add the flambéed brandy and the coarsely ground peppercorns. Stir in the cream and turn off the heat. Pour this sauce over the steaks.

Alternatively, if the filet is already cut into medallions, you can cook them on the stovetop to your preferred doneness, then serve with the sauce.
