April is the month for harvesting Pacific Oysters in Tomales Bay, two hours from here. Time for Oysters Rockefeller, baked oysters with shredded Parmesan Cheese and Romano cheese.

I also listed my other oyster recipes here that I use for this annual harvest.

Eaten raw, oven baking, pan frying, grilling and cold smoking work well for me. Recipes are based on a dozen oysters each, total weight of 3 pounds, which yields between 6 and 12 ounces of meat, plus the oyster juice inside the shells.

The easiest way to open oysters in the shell is with a sterilized flat screw driver: hammer in to the hinge of the oyster and turn like a key. See picture below.

By putting the empty shells in a burlap bag and hitting them with a hammer till the pieces are smaller than your finger nail, you create nutrients for your garden beds. Sprinkling crushed oyster shells around your plants will also help you repel snails.

Ingredients

All recipes under one hour
2 people
  1. 12Oysters Rockefeller on bottom shell, plus:
  2. 1 cupshredded Parmesan Cheese
  3. 1 cupshredded Romano Cheese
  4. 12 Tbswilted Spinach, 3 minced shallots, cup of heavy cream, cup of white cooking wine, 12 pinches of black pepper, 12 Tsp breadcrumbs, drizzle of lemon juice
  5. 12Raw fresh oysters on bottom shell, drizzle of meyer lemon juice
    California Farm Pacific Oysters in Mignonette Dip
  6. 12grilled fresh pacific oysters in double shell, optional topping of butter, tabasco sauce, 2 lemon wedges
  7. 12baked fresh pacific oysters, baked in double shell, lemon drizzle, parsley, breadcrumbs
  8. 12panfried fresh pacific oysters, removed from shell, rolled in egg, oyster juice, then corn starch, ginger powder, garlic powder, salt, pepper. Grapeseed oil to fry
  9. 12cold smoked oysters, in the shell, 5 pounds mesquite charcoal
  10. Cost: dozen pacific oysters $16, $8 per dinner
  11. Equipment: flat screwdriver sterilized in boiling water, wooden mallet, paring knife, kitchen towel, cast iron skillet to pan fry

Steps

All recipes under one hour

    Oysters Rockefeller: insert screwdriver at beard, loosen fresh oysters from their shells, remove top shell, leave bottom shell. Melt butter, glaze shallots 2 minutes, add spinach, wilt, add white wine, bubble, add lemon juice, cream, pepper, both cheeses, boil down to half and cool till the cheese sauce is solid. Top mixture on oysters, add breadcrumbs, bake 15 minutes in preheated 375 F degree oven, turn oven broiler on. Broil 2 minutes for golden color. Serve with lemon wedges.

    Fresh pacific oysters: hold oyster on cutting board with pointed end down, hit beard of oyster with flat screwdriver and wooden mallet, open oyster shell by turning the screwdriver like a key, the shells will pop open. Loosen the meat from the shell with the screw driver. Cut meyer lemon in half, squeeze some lemon juice over the oyster, tip oyster shell so the meat slides into your mouth with the oyster juice.

    Grilled oysters: 5 minutes in closed double shell, 500F degrees, shells will pop open from grilling, when meat is opaque, use paring knife to remove top, add optional butter and tabasco sauce or lemon wedge.

    Baked oysters: 15 minutes: bake oysters at 375F degrees in closed double shells till they pop open, about 8 minutes, remove top shell, cover oyster with mixture of breadcrumbs, chopped parsley, minced garlic, bake another few minutes, serve.

    Panfried oysters: shuck oysters, clamp pointed end up on cutting board, beard side up, hit with flat screwdriver and wooden mallet, split, loosen meat from the shells, roll in oyster juice and beaten egg, then roll in mixture of corn starch, ginger powder, garlic powder, pepper, and salt. High heat cast iron skillet, fry in grapeseed oil till golden. About ten minutes.

    Cold Smoked oysters: 1/2 chimney dry mesquite charcoal, once hot, cover with 1/2 chimney soaked mesquite charcoal, regulate air intake till grill heat is 200F degree. Place shucked oysters in bottom shell away from fire on grill, smoke, one hour, done.
