Concoction porridge

I'm sure you're wondering what kinda name is that... Well... It is what it is. I made this concoction because 1. I was bored 2. I had plantain that was too soft (I don't like my dodo soft and sogy so I couldn't fry and it wasn't extremely soft enough to make mosa(I actually prefer banana mosa to plantain mosa)).
This porridge was squishy, sweet and spicy. I really can't explain how it tasted or how I felt after eating it with ice cold fanta to wash it down but I hope you can create the feeling yourself after reading this.

Ingredients

  1. Yam
  2. Plantain "semi overripe" (figure out yourself😆)
  3. Scotch bonnet (decide your spicy level)
  4. Tomatoes
  5. Onions
  6. Vegetable oil
  7. Coriander powder
  8. Garlic
  9. cubeSeasoning
  10. Salt

Steps

    Peel, wash your yam and cut into large cubes

  2. 2

    Cut the plantain anyhow you like.

  3. 3

    Blend the tomatoes, scotch bonnet, onions and garlic.

  4. 4

    In a pot, pour in the yam cubes, plantain and blended pepper. Put in salt and seasoning cube. Add half teaspoon of coriander and 2 cooking spoon of vegetable oil to it. Pour water enough to cook the yam and cover the pot.

  5. 5

    Allow to cook till the yam is soft. Using a wooden spoon, break the yam and gently mash together with the plantain. Cover the pot again and allow to steam for just two minutes. Your concoction is ready! Tellme if you enjoyed it or not 😉
