Personally, I really like chicken because you can cook it in so many ways, and it always turns out great. This recipe is my own version.

Clean and separate the chicken pieces well. Place them in a pot, cover with water, and bring to a boil to make a flavorful chicken broth, prepared to your liking.

Toast the dried chiles in a skillet or on a griddle, being careful not to burn them as they can become bitter. Remove from heat, pour some hot broth over the chiles to soften them, and set aside.

Roast the tomatoes, garlic, and onion until well charred. Remove from heat and blend them with the softened chiles, a little of the chile broth, cinnamon, and cumin. Use just enough broth to make a thick sauce. Blend until smooth, then strain the sauce into a bowl.

Remove and drain the chicken pieces well, then coat them with the sauce. Place two pieces of chicken and avocado leaves, if using, on a rectangle of aluminum foil (shiny side facing the food). Fold the foil loosely to make a packet.

Place the packets in a steamer for about 20 minutes. The advantage is that the chicken is already cooked.

Serve one packet per person. You can serve with rice and beans.
