Spelt Butterkuchen (German yeasted butter cake)

Butterkuchen is one of my favorite german pastry. I used white spelt flour in this recipe. This recipe is a little different from the classic Butterkuchen.

Butterkuchen is one of my favorite german pastry. I used white spelt flour in this recipe. This recipe is a little different from the classic Butterkuchen.

In a stand mixer fitted with the dough hook, put all the dough ingredients in the bowl and knead with the dough hook on medium low speed for 10 minutes.

The dough will be on the sticky side. Cover the dough and let it ferment for an hour.

With floured hands, spread the dough into a buttered rectangular glass baking dish (I used 30 x 23 x 5.5 cm Pyrex baking dish). Make small holes into the cake using your fingers and press the small pieces of butter in the holes. Sprinkle 126g of sugar over the cake.

Let the cake rest in the baking dish for 30 minutes before baking. Bake at 375°F (190°c) for 25 to 35 minutes. After you take the cake out of the oven, immediately pour the whipping cream over the hot cake.

Enjoy the cake while it's warm.
