Qiwami Seviyan or Kimami seviyan is a traditional dessert made specially during Eid festival. This delicious sweet dish made with sugar syrup, thin vermicelli, khoya and lots of dry fruits. I have made it with fusion and served it with kesar pista rabdi.

Qiwami Seviyan or Kimami seviyan is a traditional dessert made specially during Eid festival. This delicious sweet dish made with sugar syrup, thin vermicelli, khoya and lots of dry fruits. I have made it with fusion and served it with kesar pista rabdi.
Steps

For seviyan, heat ghee in a pan and put chopped nuts.

Fry on medium heat for 2 minutes and then remove from pan.

In the same pan add thin vermicelli and roast for 2 minutes.

Remove from pan and keep aside.

In the same pan add water, sugar and Cardamom.

Add orange food colour and make sugar syrup but don't overboil.

Add fried nuts in sugar syrup and mix well.

Now add roasted vermicelli and mix well in sugar syrup, cook for 2 minutes on medium heat.

Add khoya and cook till it becomes dry. Cover and keep aside.

For rabdi, boil milk and add sugar and milk powder, mix well.

Mix saffron in 2 tbsp milk, add cornflour and add this into boiling milk.

Stirring continuously and cook till rabdi becomes thick.

Put some cooked vermicelli in a small greased bowl, press with hand, flip and give bowl shape. Pour prepared rabdi in vermicelli bowl, garnish with pistachios and saffron and serve immediately.
