Stir-Fried Rice Vermicelli with Soy Sauce (Pad See Ew)

Heat a wok or large skillet over medium-high heat and add oil. Sauté the minced garlic until fragrant, then add the sliced chicken.

Once the chicken is cooked through, add the oyster sauce, light soy sauce, sweet dark soy sauce, a splash of water, and sugar. Add the rice vermicelli noodles, eggs, and Chinese broccoli.

Stir-fry until the noodles are dry and everything is well combined. Taste and adjust seasoning as desired. Serve hot.
