Frittata is a very simple egg-based dish. You can prepare it in many ways and serve it hot or cold. It can be served as a main course or cut into pieces for an appetizer or snack. And who hasn't tried the classic frittata sandwich? Today, I'm making it with onion and fresh mint!

Frittata is a very simple egg-based dish. You can prepare it in many ways and serve it hot or cold. It can be served as a main course or cut into pieces for an appetizer or snack. And who hasn't tried the classic frittata sandwich? Today, I'm making it with onion and fresh mint!

Peel and finely chop the onion.

Wash the mint leaves and set aside.

In a nonstick skillet (about 9 1/2 inches/24 cm in diameter), heat a little olive oil. Once hot, add the onion and sauté for a few seconds.

Meanwhile, prepare the eggs. Crack the eggs into a deep plate, add the Parmesan cheese, a pinch of salt, and the mint leaves (I used them whole, but you can chop them if you prefer).

Beat everything together vigorously with a fork.

Pour the egg mixture into the skillet with the onions. Stir gently and cook until the bottom is golden brown.

Flip the frittata using a plate slightly smaller than the skillet. Press the plate onto the skillet, invert the frittata onto the plate, then slide it back into the skillet to cook the other side.

Cook for a few more minutes on the second side.

Transfer to a plate and serve.
