Danymyeon, also known as glass noodles, sweet potato starch noodles or cellophane noodles is the key ingredient in Japchae – giving this dish a glossy fancy presentation with a soft chewy/gelatinous texture. You can serve the dish hot or cold.
Personally, I love eating Japchae cold, without any meats. Slurping cold noodles on summer days is one of my childhood memories, and I was so happy I could make this dish for my family.
If you feel like experimenting, the noodles are also good in soups or any filling like egg rolls and dumplings.

Let us get started

Soak the noodles for 30 minutes in a bowl of water.

Prep your veggies (set aside)

On medium-low cook an omelet and cut into thin slices when cooled (set aside)

Blanch the spinach in boiling water, rinse in cold water and squeeze the excess water (set aside)

In the same pot boil the noodles for 5-7 minutes until soft and chewy, then drain. Add a teaspoon of sesame oil so the noodles don't stick.

Use scissors to cut the noodles into smaller pieces. Cut 3-4 times.

Saute each vegetable separately with a little bit of cooking oil until soft.

Mix the spinach seasoning. Set aside.

Grill the marinated chicken strips until done. Set aside

Pour the sauce over the noodles and use your hands to mix.

Add your vegetables and chicken until combined.

Looking good! Don't be afraid to taste while mixing this sweet and savory dish.

Garnish with thin eggs strips and sprinkle sesame seeds on top.
