A light, super crispy crust filled with a tasty, vitamin A-rich filling. Alternatively, you can make rolls inspired by spring rolls.

Cook the spinach using your preferred method (boiled, sautéed, steamed, etc.). I use frozen spinach in a microwaveable bag so I can cook it right in the package.

Once the spinach has cooled, squeeze out any excess liquid. In a bowl, combine the spinach with the crumbled hard-boiled egg yolks, diced ham, and grated cheese. Mix well and add salt if needed.

Arrange the phyllo dough in a dish suitable for an air fryer. I used 12 sheets, stacking them in groups of four and spraying a little oil between each group, layering them in a staggered pattern.

Add the filling to the base, then fold the edges of the dough up and over the filling, gently scrunching the dough to close it. Drizzle a little more oil over the edges and cook in the air fryer for 20 minutes at 350°F (180°C), then for another 5 minutes at 400°F (200°C). Temperatures and times are approximate and may vary depending on your appliance.
