Pork Loin Wrapped in Smoked Bacon with Baked Champignon Mushrooms

Preheat the oven to 400°F.

In a pan, heat the olive oil and finely chopped garlic until golden, then add the champignon mushrooms. Season with salt, black pepper, and finely chopped parsley. Cook for about 10 minutes.

After this time, turn off the heat and leave the mushrooms in the pan.

Wash and clean one onion, one carrot, and half a stalk of celery. Place them in a pot, add cold water, and make a vegetable broth.

On a large cutting board, lay out the slices of bacon.

In a large bowl, place the pork loin, season with salt and paprika, and massage well.

Place the meat on the bacon slices, roll it up well, and set aside for a moment.

Wash and peel the other carrot, cut it into three parts, and set aside for a moment.

Wash and clean the remaining half of the celery, cut it into two parts, and set aside for a moment.

Peel the other onion and cut it into four parts.

In a baking dish, add olive oil and the chopped vegetables you just prepared.

Sauté for a few minutes, then add the pork loin. Sear it on all sides for a few minutes to seal the meat.

Deglaze with white wine, add the vegetable broth and champignon mushrooms, and bake for about 1 hour and 30 minutes at 350°F.

After this time, turn off the oven and, using oven mitts, take the baking dish and place it on a kitchen surface.

Remove the vegetables and place them in a blender. Blend until smooth, leaving the mushrooms aside.

Meanwhile, let the pork loin rest, then place it on the cutting board and cut into 1/2-inch thick slices. Place them back in the same baking dish, pour the sauce over them, and bake again for about 10 minutes.

Turn off the oven, remove the baking dish, and place it on the kitchen surface. Take the serving platter, arrange the pork loin slices with the sauce, add the champignon mushrooms, and serve.
