Clean the chicken with salt, then blanch it with smashed ginger to remove impurities. When the water boils and scum rises, turn off the heat, discard the water, and rinse the chicken thoroughly.

Add the chicken and all prepared seasonings to the Instant Pot with enough water for your family's serving size. Bring to a boil, skim off any foam, then add all the vegetables. Simmer for 45 minutes to 1 hour to extract the flavors, then remove the chicken and vegetables.

Let the chicken cool, then shred it or leave the leg quarters whole, as you prefer. You can use this broth with rice noodles, glass noodles, egg noodles, macaroni, or hu tieu noodles.
