Dried Fruit Pound Cake

Easy to cook- just mix and bake! Because I use less sugar, it's rather good for breakfast and for teatime. Note: you can add nuts and fruits instead of dried fruits, too.

Easy to cook- just mix and bake! Because I use less sugar, it's rather good for breakfast and for teatime. Note: you can add nuts and fruits instead of dried fruits, too.
Steps
- 1
Preheat the oven to 180°C/350°F. Put the butter and sugar into a bowl and mix together well until you get a creamy texture.
- 2
Add the beaten eggs slowly into the bowl, and mix very well. Add the dried fruit, lemon juice and mix.
- 3
Put in flour, baking powder and salt into a bowl and lightly mix together, but do not mix too much! A powdery mixture is fine.
- 4
Spread olive oil or butter on the inside of the loaf pan, then pour in the mixture. Level out the surface of mixture a bit. Bake for about 30 min. Check whether it's cooked or not by pushing a stick into the centre. If nothing comes out with the stick, it's done. If it's not done, then bake for another 10 min. If surface is starting to get brown, cover over with aluminum foil to avoid over baking.
