Panchratna dal (also panchmel dal in Rajasthani cuisine or pancha dal in Caribbean cuisine) is a popular dal in the Indian subcontinent and Indian-origin communities in Guyana, Suriname, and Trinidad and Tobago. Lentils are an integral part of Indian cuisine.

🎁Daal is specially prepared for baati then for giving special texture and aroma I'mein adding daal masala in this recipe. I got this daal masala on Amazon not costlly.

The very first mention of Panchmel Dal is found in the Mahabharata. The story goes like this- Bhim was hiding out as a cook in King Virat's kitchen. At that time, he created a mix of five dals and slow-cooked them to make the first-ever Panchratna Dal.
Decades back I had first read about this recipe in the Times of India newspaper. The recipe in the newspaper was detailed by Maharana Arvind Singh Mewar of Udaipur.
I adapted and tweaked this recipe to suit our taste buds and the results were a delicious, flavorful dal, that has been a favorite with my family for a long time. You might be surprised that this dish does not contain any onion and garlic but s taste so good

  • For making Panchratna Daal/lentils
  • 1/2 Cupmasoor gram or red gram
  • 1/2 CupUrad gram or black gram
  • 1/2 Cupmoong gram or green gram
  • 1/2 Cuppigeon pea gram or arhar gram
  • 1 Cupchana gram or Bengal gram
  • 2 Glasswater
  • 3 TbspSalt 🧂
  • TbspTurmeric powder
  • For Gravy
  • 5Medium sized Tomatoes
  • TbspRed pepper 🌶️ powder
  • HandfulChopped coriander powder
  • 3-4chopped green chillies
  • TbspKasoori methi
  • 4 TbspCooking oil
  • Tempting ingredients
  • 2 PacketsDaal ka Masala
  • 3 TbspAmchur powder
  • 2 TbspChaat masala
  • Dropslemon juice
  • Tarka
  • 3 Tbspcooking oil
  • TbspCumin seeds
  • TbspAsafoetida
  • TbspRed pepper 🌶️ powder
  • Garnishing
  • Tbspghee
  • Dropslemon 🍋 juice

    Preparation of lentils - boil all lentils with water, salt and turmeric powder in a pressure cooker.

    Making first gravy
    (1)tomato 🍅 gravy - heat 3 Tbsp cooking oil in a pan add chopped tomatoes and red pepper 🌶️ powder mix it well then cover it with lid and stirring in a regular intervals of time.
    When oil oozes out from tomato gravy then remove from flame 🔥 and keep it aside.

    Second gravy - heat tbsp cooking oil in a pan add handful of chopped green coriander and kasoori methi,stir it well then add amchur powder and mix it well and cook for a moment
    (90seconds).

    Add precooked tomato gravy on it mix it well and then add daal masala mix it well.

    Add cooked lentils into the gravy and stir it well and cook for 5 minutes on medium to low flame 🔥.

    Tarka - heat cooking oil in tarka pan with cumin seeds when it becomes golden brown 🟤 then add asafoetida, red pepper 🌶️ powder and immediately put into the pulses or lentils. Mix it well.

    Add drops of lemon juice and Tbsp of ghee on lentils and enjoy with stuffed baati or rice 🍚 or roti.
