Steps
- 1
First, knead the dough for Multigrain Chapathi by mixing atta, salt, oil and water. Mix to a soft dough and keep covered for resting for 10 minutes.
- 2
Heat oil in a kadhai or non-stick pan. Add all mentioned seeds and when they pop up, add red chillies, curry leaves and ginger paste. Saute well.
- 3
Add the pieces of pumpkin, all the spice powders, poppy seeds, peanut powder, grated coconut and mix well. Then sprinkle some hot water (1/4 cup) and cover for 5 minutes.
- 4
Cook the pumpkin while stirring till soft but not mashed. Add lemon juice, salt to taste jaggery powder, and turn gently. Keep hot till serving.
- 5
To make chapati, heat a skillet. Roll out small lemon sized balls in a round shape using a rolling pin on a flour dusted platform. Place on skillet and let the base get small air bubbles.
- 6
Then flip and cook the top till you get brown spots. Pick with a tong and roast directly over high flame to let it puff up, first top side down and then cooking till puffed.
- 7
Remove in a cloth lined hot box, apply 1/4 teaspoon ghee on top. Make all chapatis similarly.
- 8
Serve hot and fresh with the pumpkin Stirfry and enjoy!
