Mandarin dessert cups are a light, tasty, and budget-friendly treat! I used up the last of my holiday panettone for this recipe.

Wash and dry the mandarin. Grate the zest and squeeze out the juice.

In a separate bowl, beat the egg yolks with the sugar using an electric mixer for at least 10 minutes, or by hand. Add the cornstarch and rice starch.

Pour the milk into a saucepan with the heavy cream, mandarin juice, and zest, and blend everything together.

Heat over the stove and, as soon as it starts to simmer, add the egg yolk and sugar mixture. At first, the whipped eggs will float on top—don’t stir yet, but increase the heat. Then stir vigorously; the cream will be ready quickly. Remove from heat.

Assemble the dessert in small bowls, alternating layers of panettone and cream. Finish with roughly chopped pieces of panettone on top.
