From savory fillings like cheese and ham to fresh fruit, whipped cream, and even a simple sprinkle of lemon and sugar, crepes can be anything you want them to be—really, anything and everything. Ingredients

40 minutes
Yields 7 - 9 crepes
  • 1 cmilk
  • 2eggs
  • 1 1/2 Tbspmelted butter
  • 1/2 Tbspsugar
  • 1/2 tspvanilla or lemon extract
  • 1/4 tspsalt
  • 3/4 call-purpose flour
  • Lemon curd

Steps

40 minutes
  1. 1

    In a blender, blend milk, eggs, butter, sugar, vanilla, salt, flour, and lemon zest and juice until smooth. Chill batter for atleast 30 minutes

  2. 2

    Heat a nonstick skillet over medium-low heat and lightly coat it with cooking spray or melted butter. Pour 1/4 cup batter into the pan and swirl pan immediately from side to side to form an even circle. Cook both sides until lightly browned. Remove from heat and stack on a plate in the microve

  3. 3

    Serve by spreading lemon curd (and/or whipped cream) down the center before folding the crepes into triangles

    Sprinkle with powdered sugar and enjoy!
