Ingredients

30 minutes + 1 hour resting

  1. 1 1/3 cupsinstant polenta (about 200 grams)
  2. 3 1/3 cupswater (800 ml)
  3. 1 teaspoonfine salt
  4. 1/3 cupgrated Parmesan cheese (about 35 grams)
  5. 1egg
  6. 1/3 cupcooked peas (about 60 grams)
  7. as neededBreadcrumbs,

  9. 1small pot for polenta
  10. 1whisk
  11. 1large bowl to cool the polenta
  12. 1fork
  13. 1deep plate
  14. 1baking sheet
  15. 1 sheetparchment paper
  16. Storage
  17. You can store the polenta and pea bites in the refrigerator for up to 2 days in an airtight container

Steps

30 minutes + 1 hour resting

    In a large pot, bring the water and salt to a boil.

    Gradually pour in the cornmeal, stirring constantly with a whisk to prevent lumps. Continue stirring for the time indicated on the package (usually 3-5 minutes), until you have a creamy polenta. Pour the polenta into a large bowl and let it cool for 1 hour.

    After the polenta has rested, break it up with a fork. Add the grated Parmesan and the egg.

    Mix everything well, then add the peas and mix again to create a uniform dough.

    Shape the mixture into small balls, roll them in breadcrumbs, and bake on a preheated oven at 350°F (180°C) for about 15 minutes.

    Remove from the oven and let cool. Even if the bites seem soft, don't worry—they will firm up as they cool. Serve cold or warm as an appetizer with your favorite sauce, or as a main course with a fresh salad.
