Lemon curd Swiss roll
I made this for my partner for his birthday!

Grease your pan and preheat your oven to 180c.

Beat the eggs, sugar and vanilla extract together for 5 mins with an electric hand whisk or by hand until thick and pale. Add your milk then Gently fold in the flour and baking powder until incorporated. Pour the mixture into your pan and gently ease into the corners.

Bake for 10-12 mins until golden and firm. Be careful not to overbake.

Take out your sponge and allow it to cool until you can touch the pan so 5 minutes tops, while you are waiting, sprinkle 2 tbsp sugar over a square of baking parchment. Turn the baked sponge onto the sugared paper, take off the parchment from baking, slowly start to roll the sponge in the sugared parchment and leave it to cool (Roll up from the short edge)

While it is cooling, make the filling. (My partner doesn't like cream so I used lemon butter cream and curd) I made my lemon buttercream and added the shop bought curd to it. But you can make yours with whatever fillings you like.

Lemon butter cream recipe Beat the butter in your mixer until smooth. Slowly add the icing sugar keep mixing,
Then with a spatula add the milk, lemon extract and lemon curd and mix until creamy. - 7
When your sponge is completely cooled. Roll out your sponge and Spread your buttercream and curd evenly onto the sponge. Start to roll the sponge back up but without the parchment this time.

Decorate in any way you like! Have a slice. ENJOY! 😍
