Mix all the shawarma marinade ingredients together except the mastic gum. Add the chicken and let it marinate for 30 minutes. Cook the chicken over heat, then add the mastic gum and cook until done. For the rice, heat the butter and oil, add the spices, mastic gum, and sugar, and stir for a bit. Add the rice, stir for a minute, then add the water. Bring to a boil over high heat, then reduce the heat and cook until the rice is done. Cut the pita bread into squares and toast under the broiler until golden.

To assemble: Place a layer of rice on the plate, add a layer of shawarma in the middle, then another layer of rice, and top with more shawarma. Arrange the toasted pita bread around the edge. Add the garlic sauce (toum) between the rice and the bread. Enjoy, it's really delicious—give it a try! 🤤

I had some leftover beef with onions and plain rice from yesterday, so I made a mixed plate. On the side, I served grilled kofta, tahini, garlic sauce, and coleslaw. Enjoy your meal!
