Homemade Chana Jor Garam in Airfryer

A lip smacking snack liked by one and all.
The store bought ones are usually fried.
Here, I have attempted to make it in a healthier way.
I have made Chana Jor Garam in Airfryer using minimum olive oil.
There is no compromise in taste or crispiness.
However, this recipe demands lot of time and patience.
Homemade Chana Jor Garam in Airfryer

I have made Chana Jor Garam in Airfryer using minimum olive oil.
There is no compromise in taste or crispiness.
However, this recipe demands lot of time and patience.

First, keep 3 litres water for boiling. Wash the brown chana. Once te water boils add in the washed chana.

Now, boil the chana for 4 minutes. Do not boil more, else chanas will get too moist and overcooked and shaping will get difficult later. Meanwhile, keep a thick napkin in a container. After 2 minutes some chanas will start floating. Remove the floating chanas into the napkin arrangement.

Similarly, do for the rest. Switch off gas after 4 minutes and take out all the chanas into the napkin and cover immediately to conserve the heat and moisture. Cover thos arrangement with one more thick napkin. Cover a holed lid and set aside the chanas in the napkin arrangement overnight.

Next morning the most effort-consuming process begins. Take some Chana in a plate. Keep the rest well covered to retain the softness and moisture. Using a heavy pestle as convenient, press each chana two-three times to get a perfectly shaped chana jor garam. See videos. It took almost 1 hour to do this process.

Finally, when all are ready you feel elated. Now prepare the masala.

Mix and keep in an airtight box. Note to mix garam masala just before use to retain the flavour.

Preheat Airfryer @180°C for 5 minutes. Take some pressed chana in a plate. Drizzle 1/4 tsp olive oil all over. Place it in Airfryer.

Airfry until pressed chanas are crispy, for approximately 7-8 minutes. Mix in between. If needed add in a few drops of olive oil. These Chana Jor Garam turn out crispy in Airfryer. There is no neef to deep fry them. Take out in a container.

Drizzle few drops of olive oil and mix all over. This helps the masala to stick well on the chanas. Sprinkle masala and mix. Similarly, airfry all the Chana Jor Garam.

Cool completely and fill into airtight jar. Chop all the salad and keep ready. Mix 1/2 cup chana jor garam with the salad.

Squeeze lemon and sprinkle masala as per taste. Mix well. Serve in paper cones for the actual street style feel.
