Cheese-Stuffed Meatballs in Chipotle Sauce

To prepare the meat mixture:
Finely chop the onion, cilantro, and garlic.
Add them to the ground meat and mix with the egg and salt or bouillon to taste. - 2
Once everything is mixed, form balls stuffed with cheese. Flatten a portion of the meat like a patty, add the cheese filling, then shape into a ball. For this recipe, I used Manchego and cream cheese.
Set the meatballs aside. - 3
For the sauce:
Boil the 6 tomatoes. - 4
Once boiled, blend them with 1/4 onion, chipotle peppers to taste, and salt or bouillon.
Set the sauce aside. - 5
Fry the meatballs.

Once fried, add the tomato-chipotle sauce, mix, and cook for 15 to 20 minutes. Taste and adjust salt or bouillon as needed, and add a pinch of oregano for flavor.

When the meatballs are cooked to your liking, turn off the heat and serve with rice, spaghetti, mashed potatoes, or your favorite side.
