Cooking Instructions

Prepare the Chicken:
Rub the chicken quarter leg with sea salt.

Place the chicken in a small pot and cover it with water.
Add ginger slices, smashed garlic, scallions, cooking wine, and ground turmeric.
Bring the mixture to a boil, then reduce the heat to a simmer. Cook the chicken for 25-30 minutes, or until it’s cooked through and tender. Skim off any foam or impurities that rise to the surface.

Remove the chicken from the pot and immediately give it an ice water bath. After a few minutes, pat the chicken dry with paper towels.

Prepare the Rice:
Rinse the jasmine rice under cold water until the water runs clear. Drain well.

In a small pot, heat the cooking oil or chicken fat over medium heat. Add the ginger slices and minced garlic, sautéing until fragrant.
Add the rinsed rice to the pot and stir to coat the grains with the oil.
Stir in the ground turmeric.

Pour in the chicken broth and cook in the rice cooker until done.

While the chicken and rice are cooking, it’s time to prepare the sauces. For the Soy-Ginger Sauce, just mix soy sauce, sesame oil, chicken broth, sugar, minced ginger, and minced garlic. For the Chili Sauce, blend red chili peppers, garlic, vinegar, sugar, and salt to taste. And for the Ginger-Garlic Oil, simply heat oil and pour it over the minced ginger and garlic. Super simple and full of flavor!
