It's fresher and tastier when you use fresh cocoyam pounded straight from the mortar than processed cocoyam flour.
Here's my method and the local ingredients that boosts the flavour.

It's fresher and tastier when you use fresh cocoyam pounded straight from the mortar than processed cocoyam flour.
Here's my method and the local ingredients that boosts the flavour.
Steps

In a clean pot, Boil your unpeeled cocoyam for at least 10-15 minutes.

In a separate pot wash and season your chicken, beef, kpomo, fish using seasoning cubes, pepper, onions, salt. Add enough water and leave to boil till tender.

Turn off the heat of the cocoyam. Peel and pound in a mortar making sure there are no lumps. Pour in drops of oil to ease pounding if it is too sticky.

Add pounded crayfish to the meat stock. Add Red oil and leave to boil for few minutes.

Scoop your ogiri paste into the soup. Stir and leave to boil for few minutes

Scoop the cocoyam paste into the pot. Cover and leave as long as you desire(until there are no lumps). Stir occasionally to avoid burning.

Once the cocoyam has fully dissolved and becomes thick. Taste and adjust seasoning, oil. Finally add your already washed bitterleaf and cover to boil for at least 3 to 4 minutes.

Finally turn off the heat and voila your delicious dish is set. Serve hot.
