One of my favorite Vietnamese dishes is steamed tapioca dumplings but it takes so long to make! So I present you a little hack that will give you delicious dumplings in less than 30 minutes. Enjoy!

One of my favorite Vietnamese dishes is steamed tapioca dumplings but it takes so long to make! So I present you a little hack that will give you delicious dumplings in less than 30 minutes. Enjoy!
Steps

Cut pork belly and shrimp into pieces (small dice) Blanch pork and drain. Mix shrimp and pork together

Add shallot, garlic, fish sauce, salt, sugar, paprika. Sauté with 2 tbsp neutral oil until proteins are cooked

Prepare station with cutting board, pork and shrimp filling, hot water and steamer basket.

Dip rice paper in hot water and lay on cutting board. Add filling in the middle and wrap, folding down, then fold the sides, and fold down again forming a tight square. Repeat with the second rice paper.

Carefully toss in tapioca flour and place in steamer basket.

Steam for 10 minutes on medium heat and remove.

Cut scallions into slices and add a pinch of salt. Heat up a pan with 3 tbsp neutral oil. Add hot oil to scallions.

In a bowl, combine fish sauce, sugar, and boiling water, stir. Add sliced thai chili.

Garnish with scallion oil, crumbled pork rinds, fried onions, and sweet fish sauce
