Ingredients

Serves 2-3 servings
  • 14 ozcatfish (about 400 grams)
  • 1 1/4 cupswater (300 ml)
  • 5scallions
  • 5shallots
  • 2 clovesgarlic
  • Fresh chili pepper, chili flakes
  • Sugar, chicken bouillon powder, MSG
  • Black pepper, fish sauce

    Soak the catfish in rice wine and salted water for 15 minutes, then rinse thoroughly with water.

    In a pan, caramelize 2 tablespoons sugar to make a brown sauce. Add cooking oil, then sauté shallots, garlic, and chili until fragrant. Pour in 1 1/4 cups water (300 ml), season with 2 tablespoons fish sauce, 1 tablespoon chicken bouillon powder, a pinch of MSG, black pepper, and fresh chili to taste. When the sauce comes to a boil, add the catfish and simmer on low heat for 30 minutes.

    Just before turning off the heat, add the white parts of the scallions and thinly sliced shallots. Simmer for 2 more minutes, then turn off the heat and serve.
