Amaranth Greens or Hari Maat ki Bhaji are a versatile Green Leafy Vegetable available round the Year nowadays. These fresh and flavourful Greens are a perfect treat for a healthy full meal, as a yummy Snack at Tea-time or even a weekend family treat at Shaam ki Chai. Or a Monsoon special treat for the Season.
These crisp and flavourful Fritters made with some thinly sliced Onions for a great crunch are not only delicious but also absolutely delectable and delightful. These can be enjoyed for a full fledged meal by using them in Kadhi Pakoras just as I did for Lunch today.
With just these Greens, the uses can be many. I had served them at Tea-time as well with a delicious side Fresh Red Chilli Chutney for a yummy variation. As for the Kadhi Pakoras, it also had turned out superbly well. Delicious and flavourful with every bite. Leafy Greens are always healthy and nutritious. The more these can be incorporated into our daily meals, the better. And of course with a twist for a change. That not only makes the meals more delicious and desirable but also would be a perfect accompaniment on anyday.

Make a semi thick batter with all the ingredients mentioned. Use of water depends on the quality of gram flour used. Make sure you mix it with your hands. Wash your hands thoroughly before doing so.

Wash and roughly chop the amaranth leaves or hari maat ki bhaji. Add it to the mixing bowl with all the other ingredients as mentioned. Mix until well combined. Keep aside for about 15 minutes.

Drop small balls of the batter into the hot oil. Fry few at a time. Use a clean spoon if you cannot do it with your hands. Stay safe while frying. Fry until golden brown and crisp. Take care not to burn them. Keep an eye while frying. Keep turning at regular intervals to ensure that they are evenly cooked.

Serve with red chilli chutney as I did or any dip of your choice. Enjoy!
