  • 1 tbspOil
  • 1 tbspbutter 🧈
  • 1Bayleaf
  • 1 stickcinnamon
  • 3Cloves
  • 1Black cardamom
  • 3green Cardamom
  • 1 tspCaraway seeds (Shahi jeera)
  • 1 cupOnion 🧅 chopped
  • 1Green chilli chopped
  • 1 tbspGarlic 🧄 chopped
  • 1/2 tspKasuri methi
  • 1/4 cupCream
  • 1 tbspGinger 🫚 chopped
  • 1/3 tsphaldi powder
  • 1 tbspKashmiri red chili 🌶️ Powder
  • 1 tbspCoriander powder
  • 1/2 tbspRoasted Cumin Powder
  • 2 cupsTomato chopped
  • Salt🧂 to taste
  • handfulCashew nuts
  • 2-1/2 cupsWater
  • 1 tbspSugar
  • KOFTA~
  • 1 cupgrated paneer
  • 1 cupPotato 🥔 Boiled & grated
  • 1 tbspCoriander chopped
  • 1/2 tbspGinger 🫚 chopped
  • 1Green chilli chopped
  • 1 1/2 tbspCornflour
  • Salt 🧂 to taste
  • 2 tbspCashewnuts Chopped (optional)
  • Oil for trying

Steps

    For the Kotta … mash together paneer & boiled potato 🥔
    Add chopped coriander, ginger, chopped green chilli, cornflour, salt and chopped cashew nuts.
    Mix them well and shape into round / oblong balls

    Heat oil and deep fry till golden brown on medium flame 🔥 Keep aside

    For the curry … heat oil & 1 tbsp butter together.
    Add black cardamom, cardamom & caraway seeds. Stir for 15 seconds.
    Now add chopped onions 🧅 and cook for 5 mins. Add green chilli and sauté. Add chopped garlic 🧄 and ginger 🫚 and cook for another 3 -4 minutes.
    Add haldi, chilli powder, coriander powder and cumin powder
    Lightly toss and add chopped tomatoes.

    Now add salt 🧂 & cashew nuts and cook for another 8-10 mins.
    Add 2 -1/2 cups of water and cover till tomatoes are mashy.
    Now remove from fire and let it cool down

    In a blender blend it into a fine puree ; Strain the purée for creamy texture and transfer it to a clean pan.
    Bring it to a boil and add kasoori methi powder, sugar & salt to taste.; add water if the curry is too thick.
    Add cream, stir and remove from fire.
    Place the kofta in a bowl and pour the hot curry on top ; garnish with little grated paneer and serve with choice of your bread like tandoori roti / naan / roti etc

    Note ~ if you don’t want to eat potato 🥔 add Mawa for kofta
