Kathiyawadi cuisine is hot , spicy & oily . The oil literally floats on the top .Yet it is very tasty . People visit dhabas specially to eat Kathiyawadi food .The highways from Mumbai to Gujarat are lined with these dhabas . I had eaten this subji on the way to Bhavnagar from Mumbai . We had stopped our car at one such dhaba where Kathiyawadi cuisine was their specialty. The food was very spicy but awesome. And amongst them was this Kanda - Batata nu sambhariyu shak . I have tried to recreate the same recipe . Hope you all will try this subji soon .

Masala : Take everything in a plate. Add oil & mix everything very well.

Subji : Peel potatoes & onions & keep them in water. If the potatoes & onions are big, cut them into 2.

Remove potatoes & onions from the water.Make a slit in potatoes & fill with masala. Sprinkle masala on the onions.

Heat oil in a pressure cooker. Arrange potatoes & onions one by one. Sprinkle masala on top. Add hot water about 1/2 a glass & close pressure cooker. Take 3 whistles.

Open the pressure cooker once the air is released. Gently stir the subji. Serve hot with phulkas.
