First, rinse the poha and soak it in water for 10 minutes.

Next, add the soaked poha, semolina, yogurt, and sugar to a blender. Add a little water and blend into a smooth paste.

Pour the batter into a bowl. Add water as needed so the batter is neither too thick nor too thin—aim for a consistency similar to dosa batter.

Add salt and mix well. Cover and let the batter rest for 15-20 minutes.

When ready to make dosas, add Eno fruit salt or baking soda to the batter and whisk well so the batter becomes fluffy.

Heat a nonstick skillet over medium heat. Lightly grease with oil.

Gently pour a ladleful of batter onto the skillet. Do not spread; let it form a natural round shape. Cover and cook for 2-3 minutes.

When the top is cooked and small holes appear, flip and cook the other side for about 30 seconds (traditionally, set dosa is cooked only on one side).

Serve hot with coconut chutney, tomato chutney, or sambar.
