Ingredients

6 servings
  1. 6 piecesChicken breast
  2. 3 cansChicken broth
  3. 1Large onion
  4. 1 tablespoonButter
  5. 2 cansChopped green chilis
  6. 4 cansGreat Northern beans, rinsed and drained
  7. 2 cansSeasoned tomatoes (garlic and onion flavor)
  8. 1 packageFrench’s Chili-o seasoning
  9. as neededShredded cheese (mozzarella or Monterey Jack with peppers)
  10. as neededChopped green onions
  11. as neededCilantro
  12. as neededSour cream
  13. as neededTortilla strips (cooked in oil and salted)

Steps

  1. 1

    Cook chicken in broth until done. Remove chicken, reserving broth.

  2. 2

    Shred chicken and return to pot.

  3. 3

    In butter, sauté onion, then add chilis, beans, tomatoes, and seasoning.

  4. 4

    Add reserved broth and chicken. Simmer until flavors combine and heated through.

  5. 5

    Serve topped with cheese, green onions, cilantro, sour cream, and tortilla strips.

Tips

For extra flavor, consider adding a pinch of cumin or chili powder. Adjust the spice level by using mild or hot chilis.
