Pound the dried chili peppers first until finely crushed, as they are harder to break down.

Next, pound the fresh chili peppers and garlic together, adding a little salt to make pounding easier.

Add palm sugar, MSG, and lime juice, then mix well. Add fish sauce and fermented fish sauce (pla ra). (If you add all the liquids at once and then mix, the fish sauce and pla ra may splash, so add carefully.) Taste and adjust the seasoning as you go—don't add everything at once.

Slice the cucumber and gently pound it into the mixture until well combined. Serve.
