Cooking Instructions

Cook sushi rice according to package instructions.

Season salmon with salt and pepper, then pan-sear in oil until cooked through.

Place cooked sushi rice in a bowl.

Arrange cucumber, avocado, edamame, and shredded carrot on top of the rice.
- 5
Add the cooked salmon fillet.
- 6
Drizzle spicy mayo over everything and serve.

You can use any kind of avocado for this dish, but you want to use just ripened fruit that's still pretty firm.To make the sushi rice, just make one cup of uncooked rice according to package instructions and fold in sushi rice seasoning vinegar in the amount suggested on the bottle - it's usually something like 4 to 5 Tablespoons per 2 cups of uncooked rice, so you'd just halve that if you're only making 1 cup - right after you fluff the rice, while it's still warm. That way, the seasoning soaks in better.One cup of uncooked rice will actually yield 2 to 3 servings, FYI, but it's kinda tricky cooking rice in fractions of cups because the water evaporates much more quickly.If you have some leftover steamed rice (brown or white), you can take a cup of it, cover it with a slightly damp paper towel, microwave it until warm, and fold in 2 teaspoons of sushi seasoning vinegar.You can double the avocado topping recipe if you want to make 2 servings.It's good to go meatless from time to time! :) x -

This recipe was handed down to me by my mother. If you make sushi vinegar to stock, as long as the sugar and salt have dissolved there's no need to let it rest for a day. If making the sushi vinegar on the spot for one batch of sushi rice (3 rice cooker cups' worth) you need 80 ml of rice vinegar, 2 to 3 tablespoons of sugar and 1 teaspoon of salt. The rice should be just the right sweetness. Microwave the sushi vinegar to dissolve the sugar and salt (about 20 seconds).Step 1: Cook the rice so that it's on the firm side.Step 3: Use the rice after it's cooled down a bit. If cooking 2 rice cooker cups, use 7 cm of konbu seaweed and 50 to 60 ml of sushi vinegar. While you should drain off the rice in a sieve before cooking it, it will still taste good if you just cook it right after rinsing it. It's fine to omit the kombu.
