Heat oil in a pan, add mustard seeds, cumin seeds and urad, add asafoetida, dried red chili, sweet neem leaves, green chilies, garlic paste and onion and saute.

When the onion becomes soft, add chopped tomato and mix well and let it cook for two-three minutes. When the tomato becomes soft, add turmeric, salt, chili and fry for two minutes.

When the spices are roasted, add two-three spoons of water, boil it, add cooked rice and mix well and let it cook for two minutes. Then sprinkle coriander, stir well and turn off the gas.

So the tomato rice is ready. Take it out in a serving plate, garnish with coriander and cashew nuts and serve the delicious tomato rice.
