Step 1: Cook the Foxtail Millet
1. Rinse the millet 2–3 times in water.
2. In a pan or pressure cooker, cook ½ cup foxtail millet with 1½ cups water until soft and all water is absorbed (like cooking rice). Let it cool completely.

Step 2: Make the Kebab Mixture
1. In a large bowl, combine:
Cooked and cooled millet
Mashed potatoes
Grated carrots
Boiled peas (optional)
Chopped onions, green chilies, ginger-garlic paste
All dry spices, salt, lemon juice, and coriander.

Mix everything well. The mixture should hold together. If it’s too soft, you can add 1–2 tbsp roasted besan or breadcrumbs.

Step 3: Shape the Kebabs
1. Take small portions and shape them into tikkis or oval kebabs.

Step 4: Cook the Kebabs
Shallow fry on a tawa/pan with little oil until golden brown and crisp on both sides.

You can also bake them at 180°C for 15–20 mins or air-fry for a healthier version.

Now serve with green fudina chutney or catch up.
