Fanouropita (Greek Walnut and Raisin Spice Cake) – Simple Version with Walnuts and Raisins!

This fanouropita is just like the simple one I’ve shared before (https://cookpad.wasmer.app/gr/r/15432409), but I added raisins and walnuts, plus a few secrets!

It’s very easy to make using just one bowl!

Tips:
1) Mix the orange zest with the sugar first to bring out a stronger orange flavor!
2) Sift the flour, then sprinkle the raisins on top so you don’t need extra flour in another bowl—this way, the raisins get just enough flour to keep them from sticking. Do the same with the walnuts.
3) After measuring and adding the oil to the recipe, turn the measuring cup upside down over the baking pan you’ll use. This way, any extra oil coats the pan, and you can just spread it around—no need for extra oil.

One 9x13-inch (23x33 cm) baking pan
  • 1 cupsugar (200 grams)
  • Zest of 1 orange
  • 3/4 cupolive oil (180 ml)
  • 2 teaspoonsground cinnamon
  • 1/2 teaspoonground cloves
  • 2 teaspoonsbaking powder
  • 1 teaspoonbaking soda
  • 2 cupsorange juice (480 ml)
  • 3 cupsall-purpose flour (375 grams)
  • 1 cupraisins (optional)
  • 1 cupcoarsely chopped walnuts (optional)
  • 1 teaspoonvanilla extract
  • Powdered sugar, for dusting (optional)

    In a large bowl, mix the sugar with the orange zest until fragrant.

    Add the olive oil, cinnamon, cloves, and vanilla, and mix well until the sugar dissolves.

    Add the baking powder and baking soda, and stir to combine.

    Pour in the 2 cups of orange juice and mix.

    Add 2 cups of sifted flour.

    Add the raisins and stir to coat them with flour.

    Add the remaining 1 cup of flour and the walnuts, and mix again.

    Spread the batter in a greased 9x13-inch (23x33 cm) baking pan. Use the same cup you measured the oil with to grease the pan by turning it upside down and spreading any leftover oil—no need for extra oil.

    Bake at 350°F (180°C) for 35 minutes, or until a toothpick comes out clean.

    Once the cake has cooled completely, dust with powdered sugar if desired. If you’re bringing it to church, make it the night before and decorate with powdered sugar, raisins, cinnamon, or anything you like in the morning before you go!
