Mulligatawny Soup is an Anglo-Indian dish that originated in India during the British Raj blending traditional Indian flavours with British tastes and ingredients. The name comes from the Tamil words for Pepper water describing it's origins in Indian Pepper Rasam which was modified to suit British preferences thus making it a hybrid Anglo-Indian dish. The name "Mulligatawny" comes from the Tamil words Milagu (Pepper) and Tanni (water) which put together means "Pepper water". The original dish that inspired Mulligatawny Soup is actually Indian Rasam, a zesty Peppery Garlic Consomme.

Steps
- 1
Marinate chicken strips with little salt, pepper and 1 tablespoon lemon juice for 10 minutes.
- 2
Heat ghee in a cooker. Saute peppercorns, garlic, ginger and onion until fragrant.
- 3
Also add celery, pumpkin, carrot and apple. Cook for 3-4 minutes. Also stir-fry chicken until golden and cooked through.
- 4
Stir in curry powder, turmeric and pepper powders. Add lentils and broth. Bring to a rolling boil. Pressure cook for 6-7 whistles.
- 5
After done, remove the chicken and shred it. Set aside. Meanwhile blend everything to a smooth puree. Add chicken and bring it to a boil. Adjust consistency if required.
- 6
And finally add in the coconut milk. Mix well. Let it just heat for a minute. That's it. It's all done now.
- 7
Adjust salt and pepper if required. This Soup literally has no garnish. The only garnish is that of cooked simple boiled Rice. Serve it piping hot right away. Enjoy!
Tips
For added flavour, consider garnishing with fresh Cilantro or a dollop of Yoghurt before serving.
