A Winter special Snack.
Methi matar muffin is a healthy version with the goodness of methi & pearl millet (bajra flour). Both these ingredients are healthy & nutritious. Pearl millet is used in most of the households during chilli winters as it keeps the body warm .
Here is a new variety of winter snack that can be served as breakfast, tiffin or evening snack .

Steps

Batter : In a bowl, take wheat & bajra flours and add all the dry spices. Add green chilli - ginger paste & salt.

Add chopped methi bhaji, coarsely crushed green peas, curds & sesame seeds.

Add water & mix to make a coarse paste like consistency. Cover & keep for 15 minutes.

Grease the cavities of the appe pan. Add eno fruit salt & lemon juice drops on top. Mix gently & put a few sesame seeds in each cavity of the appe pan. Drop a tbsp of batter in each cavity. Brush the top of the batter with oil.

Cover & cook the appe on medium flame till the underside is golden & done.

Flip & cook the other side too.

Remove in a plate & serve hot muffin appe immediately with minty - green garlic - coriander chutney.
Tips
1. Pearl millet flour is a gluten free flour so either add wheat flour , besan or semolina for binding .
2. This is a winter snack so make use of green garlic as much as possible in this dish as it enhances flavours in the dish .
3. You can deep fry these balls also , but I have tried to make a healthier version which tastes equally good.
