A quick recipe you can prepare a few days in advance and serve hot, cold, or at room temperature. Very flavorful and easy to make.

Chop 1 3/4 ounces of speck (about 50 grams) and set the rest aside.

In a bowl, mix the spinach, chopped speck, salt, and Parmesan cheese.

Add the eggs and mix well.

Line a baking dish with parchment paper. Pour in the mixture.

Top with the reserved slices of speck.

Bake in a convection oven at 350°F (180°C) for 30 minutes.

Cut into squares and serve.
