Ingredients

  1. 6eggs
  2. 3 1/2 cupscooked, drained, and chopped spinach (about 500 grams)
  3. 1/4 cupgrated Parmesan cheese (about 4 heaping tablespoons)
  4. 7 ouncesthinly sliced speck (about 200 grams)
  5. Salt

Steps

  1. 1

    Chop 1 3/4 ounces of speck (about 50 grams) and set the rest aside.

    In a bowl, mix the spinach, chopped speck, salt, and Parmesan cheese.

    Add the eggs and mix well.

    Line a baking dish with parchment paper. Pour in the mixture.

    Top with the reserved slices of speck.

    Bake in a convection oven at 350°F (180°C) for 30 minutes.
